Strawberry Muffin with Yogurt Icing🧁🍓 

These little gluten free sweeties whip up in minutes with hardly any mess, thats my kinda baking (aka I don't bake in general). There are many versions of these floating around so we created our own and it did not disappoint👩‍🍳

​Popping this recipe on our site for reference as well....

​Ingredients:

​1 cup almond flour
​1tbls coconut flour
​2 eggs
​2-3 tbls maple syrup
​1 tsp vanilla
​1 tsp baking powder
​splash of lemon juice
​pinch salt
​1/2 cup chopped fresh strawberries

​Grab a bowl, crack and whip the eggs, add the maple and vanilla, mix well. Add everything but the strawberries, mix well. Fold in strawberries.

​Drop into a cupcake/muffin pan, fill 3/4 the way.

​Bake 350 for 15-20 mins until top slightly starts to brown.

​Icing:

​1/2 cup greek vanilla yogurt
​1/2 cup chopped strawberries
​1 tsp maple syrup (optional)

​Blend with an immersion blender or blender cup until smooth and creamy. Drizzle over muffins when serving! ENJOY:)
