Roasted Turmeric Cauliflower + Potatoes

This Roasted Turmeric Cauliflower + Potatoes recipe is easy to make, a beautiful golden color, and perfect to serve alone or as a side dish. You can also serve this warm or cold, so no excuses....get to making this glow food dish and let us know what ya think!
Ingredients:
1 small head of cauliflower
4 small golden potatoes
Turmeric powder
Cumin powder
Smoked Paprika powder
Ginger powder
Salt + Pepper
Lime juice
Fresh or dried dill
Plain yogurt
Extra virgin olive oil
Butter or coconut oil
How To:
Preheat oven to 425
Cut your cauliflower into bite sized pieces and place on a sheet pan lined with parchment paper, helps with clean up.
Slice your potatoes 1/4-1/2 inch thick and add to the sheet pan.
Drizzle cauliflower + potatoes with a little olive oil, toss to lightly coat, sprinkle with a bit of each of the seasonings.
Place in the preheated oven and roast for 20-25 mins, until potatoes start to turn brown. Remove from oven.
Heat a large skillet, we like cast iron, over med high heat with butter or coconut oil. Dump the cauliflower + potatoes into pan, toss gently. Taste for seasoning adjustment, ours normally need more salt. Give a squeeze of fresh lime juice and another sprinkle of turmeric, stir and let let sit for a minute or so.
Serve into bowls, top with dill and a dollop of yogurt. ENJOY!
