Let me start by saying, my husband thinks these taquitos should simply be called "awesomeness". Crunchy, flavorful, gluten free and fun to dip in this spicy sweet sauce! Make them.
That being said, these East West Taquitos are delish! Now, these pictured are simply rolled with salami & yogurt cheese. You can roll anything in here you like. I am going to use taco meat next with an avocado dip and coconut milk sour cream. The gluten free wraps are cassava & coconut from Siete and I just love them, try them if you haven't, you won't regret it!
If my kids were home I would have to make a whole mess of these as they would disappear in a flash! Great party platter food too. I served up with Bubbie pickle slices and it was perfect, felt like a little party with just the 2 of us:)

Coconut Wraps - Siete brand
Uncured Salami - buy at Whole Foods
Yogurt Cheese - buy at Whole Foods - has live cultures & lactose free (can replace with jalapeno almond cheese from Kite Hill)
Ghee - I used 4th & Heart garlic here
How To:
Heat skillet to med hot with ghee. Warm wraps in the microwave for 10 secs (yep, I used a microwave, feel free not to) makes them easier to roll. I placed 1/2 cheese slice and 2 salami slices in each wrap and rolled tight. Placed directly into the heated pan, brown on each side.
Eat!
Dipping Sauce
2 Tbls Chosen Foods Harissa avocado mayo
1 tsp raw honey
1 tsp raw coconut vinegar - Coconut Secrets brand
Mix all ingredients in a bowl. Serve with Taquitos. Would also be yum to dip veggies in!
