These Chocolate Mint Truffle Bites are the perfect healthy fix when you're seeking something rich and sweet. You can vary this recipe so many ways to fit what you have handy or what you are craving. Additions like coconut oil, nut butter, raw hemp seeds, chia seeds, shredded coconut are awesome. Or ditch the mint and chocolate and go all vanilla and add cinnamon! You get the idea. 

Chocolate Mint Truffle Bites


1 cup raw walnut halves

1 cup packed pitted medjool dates

3 tbls raw cacao

1 tbls coconut oil

1 tsp vanilla extract

1/4 tsp peppermint extract

1/8 tsp salt

We added coconut and hemp seeds to this batch!

Add all the ingredients to your food processor and whiz it up. It will look a bit crumbly but hold together when you form into balls. Stash in the fridge to firm up. Enjoy!
