Super Easy Pancakes
Ok, am I the one weirdo who doesn't actually like pancakes? I know, gasp. Mitch adores them but I rarely make them since cleaning up our food. So when I saw Lara from @_littlemissfoodie post this recipe for Super Easy Pancakes I knew I had to make it for Mitch! Not only could I get behind feeding these ingredients to my family, they were too darn easy to make, which is right up my alley. I typically like to assemble most of my meals bypassing long complicated recipes.
Ingredients:
2 organic bananas
2 pastured organic eggs
1 cup sprouted organic oats
3 tbls raw hemp seeds
2 Tbsp almond yogurt
1 tsp baking soda
cinnamon
splash of vanilla
coconut oil to cook
BLEND all ingredients in a blender (see, easy). Heat your pan with coconut oil. Scoop about 1/4 cup of pancake mixture into pan, once you see bubble around the edge of the pancakes, flip.
We served with grass fed ghee and real maple syrup!
