Ingredients

1 cup cooked quinoa
1 roasted sweet potato, cubed
1 cup roasted broccoli
1/2 avocado
handful of greens or microgreens
2 tablespoons pumpkin seeds or hemp seeds
lemon tahini drizzle

Optional:

crispy chickpeas
pickled onions
soft boiled egg
feta cheese
fresh herbs
sauerkraut

Directions

Cook quinoa according to package directions.

Roast sweet potatoes and broccoli at 400 degrees until golden and tender.

Assemble bowls with quinoa, roasted vegetables, avocado, greens, and seeds.

Drizzle generously with lemon tahini dressing.

Add any optional toppings and serve warm.
