Why These Nachos Are Skin-Loving
• Sweet potato chips — Packed with beta-carotene (which converts to vitamin A) to support skin cell turnover and that natural radiance.
• Raw cheddar cheese — Shredded fresh so it melts beautifully. Raw cheese brings beneficial enzymes, probiotics, and bioavailable vitamins (including K2 and healthy fats) that support skin elasticity and hydration.
• Fresh avocado & sour cream — Healthy fats and creaminess that help your skin stay supple and moisturized.
• Black beans simmered with bone broth — Collagen-rich bone broth + fiber and plant protein for gut health (hello, clearer skin!).
• Fresh veggies & kimchi — Antioxidants, vitamin C, and probiotics for a bright, balanced complexion.
• Chorizo with warming spices — Adds satisfying flavor without processed junk.
Ingredients (Serves 4–6 as a hearty meal or appetizer)
Base & Cheese Layer:
• 1 large bag (about 10–12 oz) sweet potato chips (look for simple ingredients or bake your own thin slices)
• 8–10 oz raw cheddar cheese, freshly shredded (the key to melty perfection!)
Chorizo & Beans:
• 1 lb chorizo sausage (casings removed)
• 1–2 tsp chorizo or taco seasoning (or make your own with chili powder, cumin, garlic powder, oregano)
• 2 cans (15 oz each) black beans, drained and rinsed
• 1 small onion, diced
• 3–4 garlic cloves, minced
• 1 small can (4 oz) diced green chilis
• 1 tsp ground cumin
• Sea salt & black pepper to taste
• ½–¾ cup bone broth (for simmering—adds collagen and rich flavor)
Fresh Toppings:
• 2 ripe avocados, diced or sliced
• 2–3 Roma tomatoes, chopped
• ½ red onion, finely chopped
• 1 orange bell pepper, chopped
• ½ cup sliced black olives
• Pickled jalapeños (to taste)
• 1–2 cups shredded cabbage or slaw mix (for crunch and lightness)
• Full-fat sour cream (for dolloping)
• Hot sauce (optional, for extra kick)
• Spicy kimchi (a generous spoonful at the corners for that probiotic glow!)
Garnish Ideas: Fresh cilantro, lime wedges, extra hot sauce
Instructions
1. Prep the Chorizo & Beans
In a large skillet over medium heat, sauté the chorizo until browned and crumbly (about 6–8 minutes). Add the diced onion and garlic; cook until softened. Stir in your chorizo/taco seasoning.
Add the black beans, green chilis, cumin, salt, pepper, and bone broth. Simmer gently for 8–10 minutes until the liquid reduces slightly and flavors meld. Taste and adjust seasoning. Set aside.
2. Layer & Toast the Cheese Base (The Secret to Perfect Nachos!)
Preheat your oven to 375°F (190°C).
On a large sheet pan or oven-safe platter, spread out a single layer of sweet potato chips. Generously sprinkle with half the shredded raw cheddar.
Add another layer of chips and the remaining cheese.
Bake for 8–10 minutes until the cheese is beautifully melted and bubbly. This step creates that irresistible cheesy pull while keeping the chips crisp.
3. Build Your Nacho Masterpiece
Remove from the oven. While still warm, layer on the chorizo-bean mixture.
Add chopped tomatoes, red onion, orange bell pepper, black olives, and pickled jalapeños.
Dollop generously with sour cream and scatter diced avocado.
Finish with shredded slaw/cabbage for fresh crunch and a few spoonfuls of spicy kimchi tucked into the corners (probiotic bonus!).
Drizzle with hot sauce if your heart desires.
4. Serve Immediately
Squeeze fresh lime over the top, sprinkle with cilantro, and dig in while everything is warm and melty.
Love & Be Well Tips
• Make it your own: Vegetarian? Skip the chorizo and double the beans or add roasted veggies.
• Meal prep hack: Cook the chorizo-bean mixture ahead and store in the fridge for up to 4 days. Just reheat and assemble.
• Glow upgrade: Add a handful of fresh microgreens or sprouts on top for extra skin-supporting nutrients.
• Pairing suggestion: Enjoy with a tall glass of infused water (cucumber + mint) or your favorite herbal tea to stay hydrated and radiant.
These nachos prove that healthy eating can be fun, flavorful, and deeply nourishing. Every bite is a little act of self-love—for your skin, your gut, and your whole beautiful self
