EDIBLE COOKIE DOUGH | CHOCOLATE COCONUT PEANUT BUTTER COOKIE DOUGH BITES

When it comes to choosing dessert, I’ve become an expert. Like with all food I eat, I’m a snob. I only want the best and I’ll refuse any lesser options with a “no thanks, I’m full”. (If I ever tell you this don’t be offended, maybe I’m actually full??) Down with mediocrity.
This actually serves me well, and I highly recommend adopting this technique as an anchor for how you eat. It sounds silly, but there are far too many excellent foods out there for me to be eating boiled chicken, microwaved broccoli, and plain raw spinach at every meal. While these are nutritiously sound options, they hardly encourage creativity in the kitchen. I have a similar detest for fake foods. Why on EARTH would I eat 100 calorie packs of chips ahoy instead of enjoying a yummy homemade chocolate chip cookie (this is a much larger problem, pointing to our obsession with calories, which must end….rant saved for another time)?!? I don’t like imposters. Down with imposters.
This segways into another “healthy” trend to paleo-ify and vegan-ish all things sweet. While I am in no way shape or form against doing this (I actually think it makes sense to use great ingredients in all foods), if it doesn’t taste good, what the heck is the point?
Now that I’ve convinced you that I know #allthethings about dessert, let’s talk about today’s recipe.
This recipe is rich. I ate 1.5 of them and wanted to stop. That’s saying something people, because I can put back some dessert.
Everything about these treats makes me happy. They include all my favorite things wrapped up into one: Chocolate Coconut Peanut Butter Cookie Dough Bites. (praise hands emoji)
These are gluten and dairy free, not technically paleo because of peanut butter, but I’m team #nofoodrules, and most important of all; they taste amazing. They also make me feel amazing; emotionally, mentally, and physically.
Go ahead and grab a few staples out of your pantry and whip these up in less than 15 minutes. The perfect treat for a hostess gift, cookie exchange (please give me credit for the recipe if you share), or to keep in the house for a little something sweet at the end of supper.
One final note as you begin to make these little gems: use your hands. I cannot emphasize enough how much your life in the kitchen will transform when you get rid of the fear of touching things. This batter is absolutely best made by kneading everything together, then forming the bites, all with your hands. Trust me.
These cookie dough bites are the BEST. They are rich and indulgent, and the perfect treat with a cup of coffee or wine. Bonus...they take about 15 minutes to make.
1/2 cup Almond Flour
1/4 cup Coconut Flour
1/4 cup Coconut Sugar
1/2 cup Wild Friends Chocolate Coconut Peanut Butter
2 tsp Vanilla Extract
2 tsp Maple Syrup
1/3 cup Enjoy Life Mini Chocolate Chips More for coating if desired
Blend dry ingredients together
Add wet ingredients and knead until it forms a dough
Form Cookie Dough Bites (option to coat with melted enjoy life chocolate chips)
